Banana Quinoa Cookies

Ingredients
- 1 cup cooked Quinoa
- 1 cup uncooked oatmeal flakes
- 1 cup unsweetened coconut
- 4 ripe bananas
- 1 1/2 tsp vanilla
- 1/4 cup maple syrup
- 1/4 cup slivered almonds
- 1/4 cup dried cranberries
Instructions
- Pre heat oven to 380 degrees.
- In a large mixing bowl, mash the bananas with a fork and add vanilla and maple syrup. Mix
- Add quinoa, oatmeal, coconut and a pinch of salt. Mix until well combined.
- Stir in almonds and cranberries.
- Line baking sheet with a silicone baking sheet or parchment paper.
- Scoop batter with 1/4 cup and drop onto baking sheet. Flatten batter into desired shape. The shape will not change as they bake.
- Bake for approximately 20 minutes or until bottoms are golden brown.
- Let these cool on the tray before removing - they will be very soft and break when warm.
- Store these cookies in the fridge!
TIP: Add 1/4 cup cacao powder to recipe for chocolate Quinoa Cookies!
These cookies can be a little sticky, but the pack great in a mid size pouch and clean up easy.
