Banana Quinoa Cookies

Ingredients

  • 1 cup cooked Quinoa
  • 1 cup uncooked oatmeal flakes
  • 1 cup unsweetened coconut
  • 4 ripe bananas
  • 1 1/2 tsp vanilla
  • 1/4 cup maple syrup
  • 1/4 cup slivered almonds
  • 1/4 cup dried cranberries

 

Instructions

  1. Pre heat oven to 380 degrees.
  2. In a large mixing bowl, mash the bananas with a fork and add vanilla and maple syrup. Mix
  3. Add quinoa, oatmeal, coconut and a pinch of salt. Mix until well combined.
  4. Stir in almonds and cranberries.
  5. Line baking sheet with a silicone baking sheet or parchment paper.
  6. Scoop batter with 1/4 cup and drop onto baking sheet. Flatten batter into desired shape. The shape will not change as they bake.
  7. Bake for approximately 20 minutes or until bottoms are golden brown.
  8. Let these cool on the tray before removing - they will be very soft and break when warm.
  9. Store these cookies in the fridge!

TIP: Add 1/4 cup cacao powder to recipe for chocolate Quinoa Cookies!

 

These cookies can be a little sticky, but the pack great  in a mid size pouch and clean up easy.
