Easy Black Bean Muffins

Ingredients
- 1 can of black beans (rinsed and drained)
- 3 eggs
- ½ cup unsweetened cocoa powder
- ½ cup oats (quick or old-fashioned rolled)
- ½ cup vanilla Greek yogurt (or plain)
- 1½ tbsp honey (or pure maple syrup)
- 1 teaspoon baking powder
- 2 teaspoons vanilla extract
- ½ cup semi-sweet chocolate chips (or bittersweet. or dark!)
Instructions:
- Preheat oven to 350 degrees F. Line a muffin tin with silicone muffin cups (or paper liners).
- Measure all ingredients (except for the chocolate chips + additional toppings) in a food processor. Blend until smoothish.
- Pour the mixture into the muffin tin, filling each muffin cup almost to the top. Dress with chocolate chips and other toppings of your choice. My favorite add-ons are coconut and walnuts.
- Bake for 18-20 minutes, until a toothpick inserted into the center of a muffin comes out clean. Tip: Try not to over bake these, they can turn a little dry (trust me)
- Cool 5 minutes or so in the pan and then remove to cool completely.
